F&B Manager – International Hotel Group (Kuta)

An international hotel group with a collection of hotels in Australia, Hong Kong and Bali is looking for a FnB Manager to join their team immediately.

The ideal candidate is a dynamic and experienced leader with a strong background in managing diverse food and beverage operations, from restaurants and bars to events and in-room dining. They are hands-on, financially savvy, and skilled in driving team performance while maintaining high service standards. With excellent people management and operational skills, they foster a positive team culture, deliver exceptional guest experiences, and consistently meet financial targets through effective cost control and revenue optimisation.

Requirements :

  • Open for local candidates.
  • Tertiary qualification in Hospitality or related field preferred.
  • Minimum 3–5 years of experience in F&B and hotel operations at a managerial level.
  • Strong leadership with the ability to manage teams across multiple outlets.
  • Deep understanding of food and beverage operations and service excellence.
  • Proficient in POS system operation and setup.
  • Strong financial acumen in budgeting, cost control, and reporting.
  • Excellent verbal and written communication in English.
  • High attention to detail and commitment to maintaining hygiene and service standards.
  • Positive, hands-on, and adaptable attitude with the ability to thrive in a dynamic, fast-paced environment.
  • Passion for hospitality and continuous improvement.

Responsibilities :

  • Oversee the day-to-day operations of the restaurant, bar, room service, banqueting, and event functions to ensure smooth, efficient, and high-standard service in line with company procedures.
  • Ensure each shift is appropriately staffed, well-briefed, and effectively managed with clear delegation of tasks and responsibilities.
  • Manage the full event cycle including planning, set-up, execution, and post-event evaluations.
  • Conduct and implement regular on-the-job and off-the-job training programs to meet service standards and product knowledge.
  • Lead recruitment processes within the department including interviews, onboarding, training, and HR-related administration.
  • Establish and maintain standard operating procedures and ensure clear communication across the F&B team.
  • Facilitate regular team meetings, service briefings, and shift handovers to ensure consistent information flow and operational clarity.
  • Monitor and ensure excellent service delivery from greeting to farewell; handle guest complaints and feedback professionally and promptly.
  • Maintain control over billing procedures, cash handling, POS updates, and stock management, including regular beverage stock takes and achieving cost of sales targets.
  • Collaborate closely with the Executive Chef regarding menu updates, customer feedback, and operational improvements.
  • Manage par stock levels for all F&B equipment and supplies, ensuring availability and readiness at all times.
  • Promote and maintain a positive and productive team culture, boosting morale through incentive programs and active engagement.
  • Ensure full compliance with liquor license regulations and food safety, hygiene, and work, health and safetey standards.
  • Participate in broader hotel operations by ensuring communication with other departments, supporting security, and contributing to a safe and efficient work environment.
  • Monitor feedback channels including guest comments, surveys, and mystery shopper reports, implementing improvements as needed.
  • Complete projects and reports assigned by management accurately and on time.
