A luxurious clifftop resort in Bali is searching for a Director of Food and Beverage to join their team immediately.
The ideal candidate is a hands-on leader with a strong background in luxury F&B operations, ensuring five-star service across all dining outlets, bars, banquets, and in-villa dining. They excel in team training and retention, uphold high industry standards, and drive operational excellence through budgeting, cost control, inventory management, and compliance with hygiene regulations.
Requirements :
- Open for local and expat candidates.
- Minimum 5+ years of experience in Food & Beverage management, in a luxury resort, fine dining, or high-end hospitality environment.
- Proven ability to develop and execute successful F&B strategies, driving both guest satisfaction and revenue growth.
- Strong focus on employee training and performance management to ensure continuous growth and improvement.
- Ability to maintain a professional, disciplined, and highly motivated team culture.
- Expertise in setting up, optimising, and managing multiple F&B outlets to ensure efficiency and high service standards.
- Ability to implement and monitor operational SOPs to achieve +90% Guest Satisfaction Index and high Employee Satisfaction.
- Strong understanding of budgeting, cost control, and P&L management, ensuring financial targets are met.
- Proven ability to successfully manage and develop events, ensuring seamless execution and revenue generation.
- Strong analytical and problem-solving skills, with the ability to identify opportunities for revenue growth and cost efficiencies.
- Experience in menu engineering, pricing strategies, and trend forecasting to keep offerings competitive.
- Excellent communication and interpersonal skills.
Responsibilities :
- Lead, manage and organise all requirements for the restaurants to the highest standards and in accordance with the standard operating procedures as directed by the General Manager.
- Ensures proper sanitation in the outlets under their jurisdiction, adequate stocks of food & beverage, inter-department coordination and training. Carrying full responsibility of the operating equipment including its inventory levels.
- Displaying creativity in beverage menu design and beverage sales programs, and constantly striving to exceed revenue budgets set by the resort.
- Ensuring and enforcing the set service standard procedures by directing, supervising and motivating staff to perform to the highest level of service.
- Consistently communicating with guests and sharing feedback with the Executive Chef and Management to ensure high levels of food and service quality, and that guest satisfaction is maintained at all times.
- Making decisions and solving problems, investigating and resolving complaints regarding food and beverage service, analysing information and evaluating results to choose the best solution.
- Monitoring, controlling resources, overseeing expenses to ensure that expenditures are authorised and maintained within budgeted levels.
- Developing and driving F&B and events programs both internally and externally to ensure the events are well attended and successful.
- Working in conjunction with the Executive Chef to develop an exciting events program for the resort throughout the year.
